Vegan Rice Pudding

This rice pudding is actually pretty good. I'm not a vegan but to all the vegan lovers out there this is a delicious dish. The pudding itself is really easy and is sugary. This recipe is really good for dessert or a breakfast meal.

 


 

Ingredients

  • 1/2 cup of rice (preferably long grain rice)

  • 1 liter of non dairy milk (my favorite is pecan milk)

  • 3 cinnamon sticks

  • zest from one lemon

  • 1 piloncillo sugar

 

Instructions

  1. Add your non dairy milk to a pan on medium heat then add the cinnamon and zest

  2. let it simmer for 5 minutes after it done take the zest and cinnamon out

  3. Add your rice inside and turn the heat down to low cooking for 20 mins

  4. Halfway through cooking break up the sugar and add it into the pan

 

Storage life

It should last at least a week in the fridge.
