Tomato Cake

This cake is an unusual one for a lot of people but it one of the cheapest and delicious cakes ever. The base of the cake is a vanilla cake but the tomato brings in herbiness inside.

  • 2 cups of tomato juice (Fresh is better)

  • 1/2 cup brown sugar

  • 1/2 cup granulated sugar

  • 3/4 salted butter, softened

  • 2 eggs

  • 2 cups all- purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground cardamom

  • 1/2 teaspoon ground ginger

  • 1 1/2 cup powdered sugar

  • 1/2 teaspoon pure vanilla extract



  1. Preheat oven to to 350 F and coat your 10 cup cake pan with non spray

  2. In a large bowl, beat brown sugar, sugar, and butter until creamed

  3. Beat each eggs one at a time

  4. In another bowl, sift flour, baking powder, baking soda, salt, cinnamon, cardamom, and ginger

  5. Mix the flour mixture into creamed mixture

  6. Pour batter into the pan and bake for 40 mins or until it comes out clean with a toothpick or knife

  7. Let the cake cool in pan for 10 mins, then place cake on top of rack to cool completely.

  8. To make a tomato glaze, mix powder sugar, vanilla, and about 2-3 tablespoons of tomato juice until smooth. Drizzled over cooled cake.



Wrap with Seram Wrap and leave out for 3 to 5 days
