This Blueberry muffin was a favorite from my family members. It brings in blueberry like nothing before. With this recipe it has the crumble and the flavor of blueberry enhance all the way around it. I don't know about you but if I was craving something for breakfast it be this delicious muffin.
Ingredients
1 1/2 cups all purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoon baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 1/2 cups fresh blueberries
6 drops of blueberry extract
15 drops of blue food coloring
dash of blue sugar glitter (optional)
TOPPING:
2 tbs white sugar
2 tbs brown sugar
3 tbs all purpose flour
3 tbs butter, cubed and softened
1 teaspoon ground cinnamon
Instructions
Preheat the oven to 400 degrees. Spray grease around your muffin tins or cups.
Mix the dry Ingredients in a medium size bowl (flour, sugar, salt, baking powder). Then add the oil, egg, and milk in until a batter comes together.
Mix the food coloring and extract inside.
Mix the blueberries until well incorporated.
Put the batter in the tin or cups and start to mix all the ingredients for the topping crumble.
Sprinkle the topping on top of the mix and bake for 25 mins or until they come out clean with a toothpick.
Shelf Storage
They should be good for at least a couple of weeks in room temperature. They will get stale though so I would eat them as soon as possible.
